Fixings:
1/4 cup oil
1 cup water
1/4 cup sugar
1/2 cup vinegar
2 teaspoons salt
3 medium tomatoes, cut into wedges
1 medium onion, cut and divided into rings
1 teaspoon new coarse ground dark pepper
1 teaspoon cleaved crisp mint (discretionary)
3 medium cucumbers, peeled and cut 1/4 inch thick
System:
Consolidate all fixings in a large dish.
Throw well to blend.
Refrigerate no less than 2 prior hours serving.
